Dinner Tonight

Here's what I made for dinner tonight. One of those, throw-something-together-quick-cause-I'm-starving dishes. My kids ate with the husband earlier, so this was just for me. Seriously, took me less than 5 minutes to whip up and was super filling (I didn't finish it all). This is eating simply at it's best.

Salad:

1 c. cooked brown rice (leftover from last nights dinner)
3 c. shredded coleslaw mix (the bagged kind)
handful of baby tomatoes from my garden
large handful of green leaf lettuce leaves, torn into small pieces

Dressing:
1 box of silken Mori-Nu tofu
1 TBS. lemon juice
2 TBS. apple cider vinegar dressing
3 TBS. agave nectar
2-4 TBS. water (depending on desired consistency)
pinch or two of celtic sea salt

I blended the above in my beloved Blendtec (used the dressing button), then added an ample amount of dried parsley and pulsed one or two times to mix. I used about half of the dressing on my salad.

  2. I would love a salad that filling for dinner. Salads always leave me hungry for more... I love breads and pastas way too much for my own good. :)
